I’m a big fan of the Work Sharp systems that I own, and they are about as easy as can be to learn and implement whether you are a novice or experienced pro at sharpening. Even with the Work Sharp though there is a small amount of human error that can play a role in your experience.
There is a new product coming soon that will take free up your time, mind and hands from the task of sharpening a blade.
This new sharpener dubbed the “Knife Robot” takes all of the human error out of sharpening a knife.
“The Knife Robot has seven motors that sense the knife shape in 4 DoF (degrees of freedom forward, backward, side to side) and with its precision sander it detects the burrs, removing them based on custom input of angle, speed, and pressure. The portable version for home cooks and hobbyists allows you to choose the sander motor speed and the angle (10 to 45 degrees per side). Coming in a both a portable model for your average user at a starting price of $299 or a built in appliance professional model available as well coming in at $5,000.
While I could never foresee myself spending 5k on a knife sharpener, I’m sure there are some restaurants out there that would consider it. $299 for the portable model actually isn’t that far off the mark from many other sharpeners though. If it works as advertised it could be a great birthday or Christmas gift for the knife enthusiast in your life(or a perfect gift to yourself!)
