Butchering a complete beef round – Video by Bon Appetit

We at TTAK love a good butchery video, and this one from Bon Appetit’s Facebook page is one of the best. It shows Jason Yang of Fleisher’s Craft Butchery in New York butchering a complete beef round. He walks you through the process, explaining the cuts, and demonstrating a proficiency that is only achievable with years of practice.

 

A couple of things I noted:

I had never heard of an Oyster Steak. The butchers have been holding out on us.

I dig the Personal Protective gear. I do not think wearing chain mail makes you any less of a man. It makes you smart. It only takes a second to suffer a life altering injury. In fact legendary knifemaker Walter Brend used to be a butcher. He suffered a career-ending hand injury cutting meat. It took decades of work and possibly divine intervention to regain use of his hand. (If you haven’t heard the story, it is worth a read).

I’m hungry. I am craving red meat.

    i have some deluxe pfaelzer bros. butcher charts from the forties (approx- they were my dads). one day while reading electric meters i see that name pop up on the handheld for a muriel. so i ring and tell this 80 year old gal i’ve got these posters. somehow we figure out that she went to st. phillip’s grade school with my mom.
    when i mention it to maw she says, “ohh my, muriel pfaelzer. sure i remember her.”

    cool story, bro.

    If you’re having your steer butchered make sure to request the butchers cut when they are cutting the carcass at your homestead. It lays near the diaphram, only one per steer.
