BYOK – Bring Your Own (Steak) Knife is a bit of a thing in among knife enthusiasts. Shun’s Higonokami Steak Knife is probably the most notable production example of the trend. One of my favorite Blade Show memories is Dogwood Dan seeing me pull out my Kim Breed Model 15 at Saturday night dinner, and his then pulling out one of his knives. People around the table began following our lead. There were probably $3k of knives on the table by the time people were through. I thought of that when I saw the Skalpel Steak Knife, which is a really cool looking new Kickstarter campaign.

Stuart is a master knife maker with over 35 years experience of making custom knives.

Each Skalpel is handmade by Stuart in his workshop where everything passes through his hands and his hands only.


I am seriously considering kicking in. If I were mid-season flush with guiding cash I definitely would. I think it is that cool.

    At a recent dinner at The Palm I was served a $50. steak with a $2 knife. The first attempt at a slice was met with a shredding tear from the less than aligned and mostly dull serrations.
    So, I pulled out my own steak knife and enjoyed the remainder of my meal.
    Others at the table questioned “you bring your own knife?’
    I didn’t know BYOK was a thing, but I’m glad I’m not the only one!

    A few years ago at a local gun show my wife comes running up to me saying “give me some money, I want to buy something” and later comes back with a set of walnut boxed Gerber Steak knives from the 70’s. They are beautiful, and highly functional, and one of the reasons that Gerber became a notable knife company. Gerber lost its way, but the steak knives live on. We take them out for special occasions and they do not disappoint. This new Skalpel brand of steak knives instantly reminded me of the Gerber’s.
