Chef Martin Yan is a television chef, cookbook author, and restaurateur best known for his long running PBS series Yan Can Cook. The showmanship and humor which have made him so popular are on display here, when he breaks down an entire chicken in just 18 seconds.

It is almost like he has done this a few times. I would likely lose a finger trying to mimic his technique.

 I actually came across these videos when searching for the World Butchers’ Challenge on YouTube, which I wrote about last night.

    i worked with a guy named bubba who could put a whole fried shikkin in his mouth and just pull out the skeletal remains.

    When I get the idea of making dinner, I sit right down and MAKE RESERVATIONS. A man has to know his limits.

    The removal of the breast with the wing is a difference from the Julia Child method of breaking down a chicken, and one I will adopt. That it separates the breast from the tender is an advantage of this method.
