Obscure Object of Desire: Evercut Furtif “Stealth” Knives.


The titanium carbide surface of the Furtif knife is purported to last the average consumer 25 years before needing sharpened.

There have been many claims by many manufacturers stating that their knives never need sharpening (or boasting a decades long sharpening interval). Things that seem “too good to be true” often times are. That being said, I like innovation and experimentation, and I appreciate when a designer makes something with distinctive form. But no mater how attractive the design of a knife, if it falls short in its function,then the design is a failure for me.

From a functional point of view, the Furtif series of knives employ a laser-bonded titanium carbide coating that is incredibly tough. I have plenty of experience with carbide edged woodworking blades and bits, and the stuff has some amazing qualities. Not only is it claimed to last 4-5x longer than a ceramic knife, because the underlying substrate is steel, the knife is considerably less brittle than ceramic. And because hand use will not generate the kind of heat that machine rotation does, the edge should last considerably longer than bare steel anyway.

Style wise, these knives definitely have a unique look. Furtif translates to “stealth” and it seems to be an apt description. The dark grey color of the carbide pairs with the angularity of the handle to give the knives an ultra-modern look that would compliment many designer home kitchens. Apparently, the oddly shaped handle is actually comfortable in the hand.

It is unlikely that I will get my hands on one to test and review in the short term, so I don’t mind linking this outside review of the chef’s knife. Apparently the handle is comfortable, and the edge has done a wonderful job for many months now. The knives are made by a 5th generation cutlery company in France.

The knives range from the larger chefs and santoku knives to small paring knives. Prices for the larger knives are in the $150 range with the smaller paring knives coming in at $80. You can order them here.

    My first reaction to stuff like this is almost always to dismiss it as being gimmicky. However, that Santoku on their website looks amazing.

      I have enough experience with carbide tools to be really intrigued.

    My goodness, that handle sure doesn’t look comfortable…but it does seem unfinished and ugly. Too much to pay for something this nasty looking.

    No doubt subjective personal taste is at play here, Clay. Some of my acquaintances raise their eyebrows at my esthetic choices in regard to all kinds of objects, too, which in their opinion are old fashioned and out of date.

    1. I certainly understand traditional. My personal tastes lean that way. But I can imagine that knife in my buddies kitchen, which is stark and ultra-modern. If it is a functionally solid knife that is.

    I’ve owned the chef knife for a little over a month now, AND I LOVE IT!!! This knife is extremely sharp and cuts through meat and produce like butter. Using this knife, I’ve been able to trim chicken breasts in seconds, and cut tomatoes into paper thin slices without squishing the fruit. My only complaint about the knife is that the bolster of the knife is at a diagonal angle, which does take a little time to adjust to. The handle itself is not uncomfortable at all, and I haven’t even really noticed the angular protrusions of the knife handle while using it. I absolutely would recommend this knife!

    UPDATE: A month after writing my first review, I’ve found 2 small dings in the blade of the knife, and the black coating is starting to wash off as well (despite me hand washing and putting the knife away immediately after each use). The knife is still plenty sharp after 3 months of use, but the 2 dings should not be there considering how diligent I’ve been with the care of the knife. Definitely does not have the durability that was promised, and I sincerely doubt it will last for 25 years.

    Thought I would add my two cents to this thread. I’ve owned a Furtif 19 cm chef’s knife with the black coating for 7 years. As a kitchen tool, it has been amazing. It slices, dices, chops without even a whimper. On the other hand, as has been the experience of Jesse Jade (see above) , the black coating is flaking off significantly -both during washing and food prep- rendering the knife useless. So, while the blade’s edge may, in fact, not require sharpening for 25 or 30 years, unless I can scrape off the rest of the coating so my dinner guests don’t get a dose of titanium along with their tacos, my knife has reached end of life after 7 years. Wouldn’t buy this again.
